High Protein Cereal Cookies
Make them savory, make them sweet! What I love about this recipe is that these cereal cookies are a no-bake treat that can last up for 2-3 days in the fridge and can be customized to your favorite cereal. Below is the recipe for the basic cookie but don't be afraid to add your spin on it!
1 Cup mini marshmallows
1 Tbsp unsalted butter
1 Tbsp cocoa powder
1 Tbsp peanut butter
Pinch of salt
1.5 Cups whole-grain cereal (I use Kashi)
½ Cup semisweet chocolate chips
1. Combine marshmallows, butter, cocoa, vanilla, and salt in a large microwave safe bowl and microwave on high for one minute. Remove bowl from microwave and stir with a large rubber spatula coated with cooking spray.
2. Stir in cereal and chocolate chips
3. Coat a 1/4th cup dry measuring cup (or cookie scoop) with cooking spray and lightly pack the measuring cup with the cereal mixture; drop onto a parchment paper-line baking sheet or plate and freeze or refrigerate until firm.
Yields appx: 8 Cookies; Calories appx 90 per cookie
