Cheese can be one of the hardest food items for people to give up when going vegan. This simple, healthy, and versatile cashew cream cheese recipe is easy and effective at curbing those cravings! You can add fresh fruit for a sweeter spread or cumin and garlic for a savory finish.
.5 lb of raw cashews that have been soaking in water for at least 3 hours
2 Tablespoons of lemon juice
2 tablespoons nutritional yeast
Salt and pepper to taste
Combine the cashews with the lemon, nutritional yeast and salt and pepper. Blend the ingredients together by using an immersion blender or food processor scrapping down the sides. Serve immediately or refrigerate for up to five days.
